Crispy Skillet Pepperoni Pizza Tacos

Ingredients
1 lb pepperoni pizza sausage, casings removed
4 medium flour tortillas (6–8 inch)
½ cup pizza sauce or marinara
1 small red onion, thinly sliced
Pickled jalapeños or banana peppers (optional)
Neutral oil, for the pan
To finish:
Fresh basil or oregano
Crushed red pepper flakes
Optional: ranch or hot honey drizzle
Instructions
1. Preheat the skillet:
Place a nonstick or cast iron skillet over medium heat and add a light slick of oil.
2. Spread the sausage:
On a plate or board, spread a thin, even layer of raw pepperoni pizza sausage over one side of each tortilla—almost to the edges (like a meaty pizza crust).
3. Cook sausage-side down:
Carefully place the tortilla sausage-side down into the hot pan. Use a spatula to press it gently so it makes full contact with the pan. Cook for 4–5 minutes, until the sausage is browned, cooked through, and crisp around the edges.
4. Flip & crisp the tortilla:
Flip and cook the tortilla side for 1–2 minutes more, just until lightly crisped and golden.
5. Add sauce & toppings:
Flip back to sausage-side up. Spoon a little pizza sauce on top and spread gently. Add sliced onions and jalapeños if using. Let it warm through another 1–2 minutes off heat.
6. Finish & serve:
Top with fresh herbs, red pepper flakes, and optional drizzle of ranch or hot honey.
Serve flat, folded taco-style, or sliced into wedges.
